A few weeks back I had the pleasure of meeting Albana from Amazonian who sell organic and fair trade açai in Switzerland. I’d tried açai before in restaurants/cafés but never at home so I was delighted to give it a go myself.
It almost seems a bit silly to write a recipe on how to do it as it’s actually so simple and there are so many different combinations possible, and no right or wrong way.
Açai, an antioxidant-rich fruit, is an indigenous berry found in the forests of the Amazon and is praised as one of the healthiest berries there are. The properties contained inside açai berries are thought to help prevent arthritis, inflammation, aid in weight loss, support the immune system, aid digestion and is often used as a power drink for athletes.
♦ 2 tbsp chia seeds, soaked overnight in coconut milk (I use this one from Alpro)
♦ 1 frozen packet açai (mine is from Amazonian)
♦ 1 frozen banana
♦ 1 Strawberry flavoured soya yoghurt
♦ Coconut milk (or other milk)
♦ Shredded coconut
♦ Dates, pitted and cut into small pieces
♦ Passion fruit
In a bowl mix together your oats, shredded coconut and dates and put aside (this also makes for a great granola). In a blender mix the açai, bananas and milk, adding more milk until you get your desired consistency. (You do however want it more on the thicker side as you’ll be eating it with a spoon.) Next layer your chia pudding into a small glass, add soya yoghurt and the açai mixture and top with your granola mix, pomegranate and passion fruit. Et voilà, you’re done!
Super easy, super tasty and super versatile (and yes, I think I just created a great advertising slogan!)
But really, there are probably no combinations that wouldn’t work, and that goes for smoothies generally.
I am definitely putting this in the breakfast and dessert category.
